Chinese Seafood Recipes - Oysters with Black Bean Sauce Recipe

Ingredients

  • 350 g/12 oz shelled oysters

  • 120 ml/4 fl oz/1/2 cup peanut oil

  • 2 cloves garlic, crushed

  • 3 spring onions (scallions), sliced

  • 15 ml/1 tbsp black bean sauce

  • 30 ml/1 tbsp dark soy sauce

  • 15 ml/1 tbsp sesame oil

  • pinch chili powder


Method:

  1. Blanch the oysters in boiling water for 30 seconds then drain.

  2. Heat the oil and stir-fry the garlic and spring onions for 30 seconds.

  3. Add the black bean sauce, soy sauce, sesame oil and oysters and season to taste with chili powder. Stir-fry until heated through and serve at once.
