Ingredients

30 ml/2 tbsp groundnut
(peanut) oil

2 cloves garlic, crushed

1 slice ginger root, finely
chopped

225 g/8 oz peeled prawns
-
4 spring onions
(scallions), thickly sliced

120 ml/4 fl oz/1/2 cup
chicken stock
-
5 ml/1 tsp brown sugar
-
5 ml/1 tsp soy sauce
-
5 ml/1 tsp hoisin sauce
-
5 ml/1 tsp Tabasco sauce
Method:
-
Heat the oil with the garlic and ginger and fry
until the garlic is lightly browned. Add the prawns
and stir-fry for 1 minute.

Add the spring onions and
stir-fry for 1 minute. Add the remaining
ingredients, bring to the boil, cover and simmer for
4 minutes, stirring occasionally.

Check the
seasoning and add a little more Tabasco sauce if you
prefer.
