Chinese Seafood Recipes - Peking Prawns Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 1 slice ginger root, finely chopped

  • 225 g/8 oz peeled prawns

  • 4 spring onions (scallions), thickly sliced

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 5 ml/1 tsp brown sugar

  • 5 ml/1 tsp soy sauce

  • 5 ml/1 tsp hoisin sauce

  • 5 ml/1 tsp Tabasco sauce


Method:

  1. Heat the oil with the garlic and ginger and fry until the garlic is lightly browned. Add the prawns and stir-fry for 1 minute.

  2. Add the spring onions and stir-fry for 1 minute. Add the remaining ingredients, bring to the boil, cover and simmer for 4 minutes, stirring occasionally.

  3. Check the seasoning and add a little more Tabasco sauce if you prefer.
