Chinese Seafood Recipes - Plaice with Garlic Recipe

Ingredients

  • 350 g/12 oz plaice fillets

  • salt

  • 45 ml/3 tbsp corn-flour (cornstarch)

  • 1 egg, beaten

  • 60 ml/4 tsp groundnut (peanut) oil

  • 3 cloves garlic, chopped

  • 4 spring onions (scallions), chopped

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sesame oil


Method:

  1. Skin the plaice and cut it into strips. Sprinkle with salt and leave to stand for 20 minutes. Dust the fish with corn-flour then dip in the egg.

  2. Heat the oil and fry the fish strips for about 4 minutes until golden brown. Remove from the pan and drain on kitchen paper.

  3. Pour off all but 5 ml/1 tsp of oil from the pan and add the remaining ingredients.

  4. Bring to the boil, stirring, then simmer for 3 minutes. Pour over the fish and serve immediately.
