Plaice with Garlic Recipe
Ingredients

350 g/12 oz plaice fillets
-
salt
-
45 ml/3 tbsp corn-flour
(cornstarch)
-
1 egg, beaten
-
60 ml/4 tsp groundnut
(peanut) oil
-
3 cloves garlic, chopped
-
4 spring onions
(scallions), chopped
-
15 ml/1 tbsp rice wine or
dry sherry
-
5 ml/1 tsp sesame oil
Method:
-
Skin the plaice
and cut it into strips. Sprinkle with salt and leave
to stand for 20 minutes. Dust the fish with
corn-flour then dip in the egg.

Heat the oil and fry
the fish strips for about 4 minutes until golden
brown. Remove from the pan and drain on kitchen
paper.

Pour off all but 5 ml/1 tsp of oil from the
pan and add the remaining ingredients.

Bring to the
boil, stirring, then simmer for 3 minutes. Pour over
the fish and serve immediately.
