Plaice with
Pineapple Sauce Recipe
Ingredients
450 g/1lb plaice fillets
5 ml/1 tsp salt
30 ml/2 tbsp soy sauce
200 g/7 oz canned pineapple
chunks
2 eggs, beaten
100 g/1/2 cup corn-flour
(cornstarch)
oil for deep-frying
30 ml/2 tbsp water
5 ml/1 sesame oil
Method:
Cut the plaice
into strips and place in a bowl. Sprinkle with salt,
soy sauce and 30 ml/2 tbsp of the pineapple juice
and leave to stand for 10 minutes.
Beat the eggs
with 45 ml/3 tbsp of corn-flour to a batter and dip
the fish in the batter.
Heat the oil and deep-fry
the fish until golden brown. Drain on kitchen
pepper. Put the remaining pineapple juice in a small
saucepan.
Blend 30 ml/2 tbsp of corn-flour with the
water and stir it into the pan. Bring to the boil
and simmer, stirring, until thickened.
Add half the
pineapple pieces and heat through. Just before
serving, stir in the sesame oil.
Arrange the cooked
fish on a warmed serving plate and garnish with the
reserved pineapple. Pour over the hot sauce and
serve at once.
