Chinese Seafood Recipes - Poached Prawns with Ham and Tofu Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 225 g/8 oz tofu, cubed

  • 600 ml/2 1/2 cups chicken stock

  • 100 g/4 oz smoked ham, cubed

  • 225 g/8 oz peeled prawns


Method:

  1. Heat the oil and fry the tofu until lightly browned. Remove from the pan and drain.

  2. Heat the stock, add the tofu and ham and simmer gently for about 10 minutes until the tofu is cooked.

  3. Add the prawns and simmer for a further 5 minutes until heated through. Serve in deep bowls.
