Prawn Dumplings with Tomato Sauce Recipe
Ingredients

900g/2 lb peeled prawns
-
450g/1lb minced cod
-
4 eggs, beaten
-
50g/1/2 cup corn-flour
-
2 cloves garlic crushed
-
30ml/2 tbsp soy sauce
-
15ml./1 tbsp sugar
-
15ml.1 tbsp peanut oil
For the Sauce
-
30ml/2 tbsp peanut oil
-
100g/4oz spring onions,
chopped
-
100g/4oz mushrooms,
chopped
-
100g/4oz ham., chopped
-
2 stalks celery, chopped
-
200g/7oz tomatoes, skinned
and chopped
-
300ml/1 1/4 cup water
-
salt and freshly ground
pepper
-
15ml/1 tbsp corn-flour
Method:
-
Finely chop the
prawns and mix with the cod. Stir in the eggs,
corn-flour, garlic, soy sauce, sugar and oil.

Bring a
large saucepan of water to the boil and drop
spoonfuls of the mixture into the saucepan. Return
to the boil and simmer for a few minutes until the
dumplings float to the surface. Drain well.

To make
the sauce, heat the oil and fry the spring onions
until soft but not browned. Add the mushrooms and
fry for 1 minute then add the ham, celery and
tomatoes and fry for 1 minute.

Add the water, bring
to the boil and season with salt and pepper. Cover
and simmer for 10 minutes, stirring occasionally.

Mix the
corn-flour with a little water and stir it
into the sauce. Simmer for a few minutes, stirring,
until the sauce clears and thickens. Serve with the
dumplings.
