Prawn and Egg Cups Recipe
Ingredients

15 ml/1 tbsp sesame oil
-
8 peeled king prawns
-
1 red chili pepper,
chopped
-
2 spring onions
(scallions), chopped
-
30 ml/2 tbsp chopped
abalone (optional)
-
8 eggs
-
15 ml/1 tbsp soy sauce
-
salt and freshly ground
pepper
-
few sprits of flat-leaved parsley
Method:
-
Use the sesame
oil to grease 8 ramekin dishes. Place one prawn in
each dish with a little of the chili pepper, spring
onions and abalone, if using.

Break an egg into each
bowl and season with soy sauce, salt and pepper.
-
Stand the
ramekins on a baking sheet and bake in a preheated
oven at 200C°/400°F/gas mark 6
for about 15 minutes until the eggs are set and
slightly crisp around the outside.
-
Lift them
carefully on to a warmed serving plate and garnish
with parsley.
