Chinese Seafood Recipes - Prawn and Egg Cups Recipe

Ingredients

  • 15 ml/1 tbsp sesame oil

  • 8 peeled king prawns

  • 1 red chili pepper, chopped

  • 2 spring onions (scallions), chopped

  • 30 ml/2 tbsp chopped abalone (optional)

  • 8 eggs

  • 15 ml/1 tbsp soy sauce

  • salt and freshly ground pepper

  • few sprits of flat-leaved parsley


Method:

  1. Use the sesame oil to grease 8 ramekin dishes. Place one prawn in each dish with a little of the chili pepper, spring onions and abalone, if using.

  2. Break an egg into each bowl and season with soy sauce, salt and pepper.

  3. Stand the ramekins on a baking sheet and bake in a preheated oven at 200C°/400°F/gas mark 6 for about 15 minutes until the eggs are set and slightly crisp around the out­side.

  4. Lift them carefully on to a warmed serving plate and garnish with parsley.
