Chinese Seafood Recipes - Prawns with Asparagus Recipe

Ingredients

  • 450 g/1lb asparagus, cut into chunks

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 slices ginger root, minced

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 2.5 ml/1/2 tsp salt

  • 225 g/8 oz peeled prawns


Method:

  1. Blanch the asparagus in boiling water for 2 minutes then drain well. Heat the oil and fry the ginger for a few seconds.

  2. Add the asparagus and stir until well coated with oil. Add the soy sauce, wine or sherry, sugar and salt and heat through.

  3. Add the prawns and stir over a low heat until the asparagus is tender.
