Chinese Seafood Recipes - Prawns with Black Bean Sauce Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 1 clove garlic, crushed

  • 45 ml/3 tbsp black bean sauce

  • 1 green pepper, chopped

  • 1 onion, chopped

  • 120 ml/4 fl oz/1/2 cup fish stock

  • 5 ml/1 tsp sugar

  • 15 ml/1 tbsp soy sauce

  • 225 g/8 oz peeled prawns

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp water


Method:

  1. Heat the oil and stir-fry the salt, garlic and black bean sauce for 2 minutes. Add the pepper and onion and stir-fry for 2 minutes.

  2. Add the stock, sugar and soy sauce and bring to the boil. Add the prawns and simmer for 2 minutes.

  3. Mix the corn-flour and water to a paste, add it to the pan and simmer, stirring, until the sauce clears and thickens.
