Prawns with Black Bean Sauce Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil

5 ml/1 tsp salt

1 clove garlic, crushed
-
45 ml/3 tbsp black bean
sauce
-
1 green pepper, chopped
-
1 onion, chopped
-
120 ml/4 fl oz/1/2 cup fish
stock
-
5 ml/1 tsp sugar
-
15 ml/1 tbsp soy sauce
-
225 g/8 oz peeled prawns
-
15 ml/1 tbsp corn-flour
(cornstarch)

45 ml/3 tbsp water
Method:

Heat the oil and
stir-fry the salt, garlic and black bean sauce for
2 minutes. Add the pepper and onion and stir-fry for
2 minutes.

Add the stock, sugar and soy sauce and
bring to the boil. Add the prawns and simmer for 2
minutes.

Mix the corn-flour and water to a paste, add
it to the pan and simmer, stirring, until the sauce
clears and thickens.
