Chinese Seafood Recipes - Prawns with Celery Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 3 slices ginger root, minced

  • 450 g/1b peeled prawns

  • 5 ml/1 tsp salt

  • 15 ml/1 tbsp sherry

  • 4 stalks celery, chopped

  • 100 g/4 oz almonds, chopped


Method:

  1. Heat half the oil and fry the ginger until lightly browned. Add the prawns, salt and sherry and stir-fry until well coated in oil then remove from the pan.

  2. Heat the remaining oil and stir-fry the celery and almonds for a few minutes until the celery is just tender but still crisp.

  3. Return the prawns to the pan, mix well and heat through before serving.
