Chinese Seafood Recipes - Prawns with Chinese Mushrooms Recipe

Ingredients

  • 8 dried Chinese mushrooms

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 3 slices ginger root, minced

  • 450 g/1lb peeled prawns

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp salt

  • 60 ml/4 tbsp fish stock


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps. Heat half the oil and fry the ginger until lightly browned.

  2. Add the prawns, soy sauce and salt and stir-fry until coated in oil then remove from the pan. Heat the remaining oil and stir-fry the mushrooms until coated with oil.

  3. Add the stock, bring to the boil, cover and simmer for 3 minutes. Return the prawns to the pan and stir until heated through.
