Chinese Seafood Recipes - Prawns Chow Mien Recipe

Ingredients

  • 450 g/1lb peeled prawns

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 15ml/1 tbsp rice wine or dry sherry

  • 4 dried Chinese mushrooms

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 1 slice ginger root, minced

  • 100 g/4 oz Chinese cabbage, sliced

  • 100 g/4 oz bamboo shoots, sliced

  • Soft Fried Noodles


Method:

  1. Mix the prawns with the corn-flour, soy sauce and wine or sherry and leave to stand, stirring occasionally.

  2. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps.

  3. Heat the oil and fry the salt and ginger for 1 minute. Add the cabbage and bamboo shoots and stir until coated with oil.

  4. Cover and simmer for 2 minutes. Stir in the prawns and marinade and stir-fry for 3 minutes. Stir in the drained noodles and heat through before serving.
