Chinese Seafood Recipes - Prawns with Crab Recipe

Ingredients

  • 45ml/3 tbsp peanut oil

  • 3 spring onions, chopped

  • 1 sliced ginger root, minced

  • 225g/8oz crab meat

  • 15ml/1 tbsp rice wine or dry sherry

  • 30ml/2 tbsp chicken or fish stock

  • 15ml/1 tbsp soy sauce

  • 5ml/1 tsp brown sugar

  • 5ml/1 tsp wine vinegar

  • freshly ground pepper

  • 10ml/2 tsp corn-flour

  • 225g/8oz peeled prawns


Method:

  1. Heat 30 ml/2 tbsp of oil and fry the spring onions and ginger until lightly browned. Add the crab meat and stir-fry for 2 minutes.

  2. Add the wine or sherry, stock, soy sauce, sugar and vinegar and season to taste with pepper. Stir-fry for 3 minutes.

  3. Mix the corn-flour with a little water and stir it into the sauce. Simmer, stirring, until the sauce thickens.

  4. Meanwhile, heat the remaining oil in a separate pan and stir-fry the prawns for a few minutes until heated through.

  5. Arrange the crab mixture on a warmed serving plate and top with the prawns.
