Chinese Seafood Recipes - Prawns with Cucumber Recipe

Ingredients

  • 225 g/8 oz peeled prawns

  • salt and freshly ground pepper

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 1 cucumber

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 1 onion, finely chopped

  • 15 ml/1 tbsp rice wine or dry sherry

  • 2 slices ginger root, minced


Method:

  1. Season the prawns with salt and pepper and toss with the corn-flour. Peel and seed the cucumber and cut it into thick slices.

  2. Heat half the oil and fry the garlic and onion until lightly browned. Add the prawns and sherry and stir-fry for 2 minutes then remove the ingredients from the pan.

  3. Heat the remaining oil and fry the ginger for 1 minute. Add the cucumber and stir-fry for 2 minutes.

  4. Return the prawn mixture to the pan and stir-fry until well mixed and heated through.
