Chinese Seafood Recipes - Prawns Curry Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 4 spring onions (scallions), sliced

  • 30 ml/2 tbsp curry powder

  • 2.5 ml/1/2 tsp salt

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 450 g/1lb peeled prawns


Method:

  1. Heat the oil and fry the spring onions for 30 seconds. Add the curry powder and salt and stir-fry for 1 minute.

  2. Add the stock, bring to the boil and simmer, stirring, for 2 minutes. Add the prawns and heat through gently.
