Chinese Seafood Recipes - Prawns and Pea Stir-Fry Recipe

Ingredients

  • 450 g/1lb peeled prawns

  • 5 ml/1 tsp sesame oil

  • 5 ml/1 tsp salt

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 1 slice ginger root, minced

  • 225 g/8 oz blanched or frozen peas, thawed

  • 4 spring onions (scallions), chopped

  • 30 ml/2 tbsp water

  • salt and pepper


Method:

  1. Mix the prawns with the sesame oil and salt. Heat the oil and stir-fry the garlic and ginger for 1 minute.

  2. Add the prawns and stir-fry for 2 minutes. Add the peas and stir-fry for 1 minute.

  3. Add the spring onions and water and season with salt and pepper and a little more sesame oil, if liked. Heat through, stirring carefully, before serving.
