Chinese Seafood Recipes - Prawns with Peppers Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 green pepper, cut into chunks

  • 450 g/1lb peeled prawns

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 60 ml/4 tbsp water

  • 5 ml/1 tsp rice wine or dry sherry

  • 2.5 ml/1/2 tsp salt

  • 45 ml/2 tbsp tomato puree (paste)


Method:

  1. Heat the oil and stir-fry the pepper for 2 minutes. Add the prawns and tomato puree and stir well.

  2. Blend the corn-flour water, wine or sherry and salt to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
