Prawns with Tomatoes Sauce Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil

1 clove garlic, crushed

2 slices ginger root,
minced
-
2.5 ml/1/2 tsp salt
-
15ml/1 tbsp rice wine or
dry sherry
-
15 ml/1 tbsp soy sauce
-
6 ml/4 tbsp tomato ketchup
(catsup)

120 ml/4 fl oz/1/2 cup fish
stock
-
350 g/12 oz peeled prawns
-
10 ml/2 tsp corn-flour
(cornstarch)

30 ml/2 tbsp water
Method:
-
Heat the oil and stir-fry the garlic, ginger and
salt for 2 minutes.

Add the wine or sherry, soy
sauce, tomato ketchup and stock and bring to the
boil. Add the prawns, cover and simmer for 2
minutes.

Mix the corn-flour and water to a paste,
stir it into the pan and simmer, stirring, until the
sauce clears and thickens.
