Chinese Seafood Recipes - Prawns with Tomatoes Recipe

Ingredients

  • 2 egg whites

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 5 ml/1 tsp salt

  • 450 g/1lb peeled prawns

  • oil for deep-frying

  • 30 ml/2 tbsp rice wine or dry sherry

  •  225 g/8 oz tomatoes, skinned, seeded and chopped


Method:

  1. Mix together the egg whites, corn-flour and salt. Stir in the prawns until they are well coated.

  2. Heat the oil and deep-fry the prawns until cooked. Pour off all but 15 ml/1 tbsp of the oil and reheat.

  3. Add the wine or sherry and tomatoes and bring to the boil. Stir in the prawns and heat through quickly before serving.
