Chinese Seafood Recipes - Salmon with Tofu Recipe

Ingredients

  • 120ml/1/2 cup peanut oil

  • 450g/1 lb tofu, cubed

  • 2.5ml/1/2 tsp sesame oil

  • 100g/4oz salmon fillet, chopped

  • dash of chili sauce

  • 250ml/1 cup fish stock

  • 15ml/1 tbsp corn-flour

  • 45ml/3 tbsp water

  • 2 spring onions, chopped


Method:

  1. Heat the oil and fry the tofu until lightly browned. Remove from the pan. Reheat the oil and sesame oil and fry the salmon and chili sauce for 1 minute.

  2. Add the stock, bring to the boil, then return the tofu to the pan. Simmer gently, uncovered, until the ingredients are cooked through and the liquid has reduced.

  3. Blend the corn-flour and water to a paste. Stir in a little at a time and simmer, stirring, until the mixture thickens.

  4. You may not need all the corn-flour paste if you have allowed the liquid to reduce. Transfer to a warmed serving plate and sprinkle with the spring onions.
