Chinese Seafood Recipes - Sautéed Crab Meat Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 4 spring onions (scallions), finely chopped

  • 1 slice ginger root, minced

  • 225 g/8 oz crab meat

  • 45 ml/3 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp wine vinegar

  • 10 ml/2 tsp corn-flour (cornstarch)


Method:

  1. Heat the oil and fry the garlic, spring onions and ginger until lightly browned. Add the crab meat and stir-fry for 1 minute.

  2. Mix the remaining ingredients and stir them into the pan. Simmer, stirring, until the sauce clears and thickens.
