Chinese Seafood Recipes - Sautéed Prawns Recipe

Ingredients

  • 450 g/1lb uncooked prawns

  • 90 ml/6 tbsp groundnut (peanut) oil

  • 4 spring onions (scallions), chopped

  • 1 slice ginger root, minced

  • 30 ml/2 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp sugar

  • 15 ml/1 tbsp fish stock or water

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sesame oil


Method:

  1. Clean the prawns and cut away the tentacles and feet.

  2. Heat the oil and fry the prawns until pink. Remove from the pan and pour off all but 30 ml/2 tbsp of oil.

  3. Add the spring onions and ginger and stir-fry for 30 seconds. Add all the remaining ingredients except the sesame oil and bring to the boil.

  4. Simmer, uncovered, for 2 minutes then return the prawns to the pan and simmer, stirring, for 5 minutes. Serve sprinkled with sesame oil.
