Sautéed Swordfish Recipe
Ingredients

450 g/1 lb
swordfish steaks
-
salt
-
30 ml/2 tbsp groundnut
(peanut) oil
-
2 slices ginger root, minced
-
1 clove garlic, crushed
-
2.5 ml/1/2 tsp freshly ground
pepper
-
5 ml/1 tsp sugar
-
30 ml/2 tbsp soy sauce
-
1 spring onion, chopped
Method:

Sprinkle the
swordfish steaks on both sides with salt and leave
to stand for 30 minutes. Rinse and pat dry.

Heat the
oil and add the swordfish. Sprinkle with ginger,
garlic, salt, pepper, sugar and soy sauce and sauté
gently for about 10 minutes each side.

Add the
spring onions and fry for a further 1 minute before
serving.
