Chinese Seafood Recipes - Scallops with Egg Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 350 g/12 oz shelled scallops

  • 25 g/1 oz smoked ham, chopped

  • 30 ml/2 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 2.5 ml/1/2 tsp salt

  • pinch of freshly ground pepper

  • 2 eggs, lightly beaten

  • 15 ml/1 tbsp soy sauce


Method:

  1. Heat the oil and stir-fry the scallops for 30 seconds. Add the ham and stir-fry for 1 minute.

  2. Add the wine or sherry, sugar, salt and pepper and stir-fry for 1 minute.

  3. Add the eggs and stir gently over a high heat until the ingredients are well coated in egg. Serve sprinkled with soy sauce.
