Scallops with Egg Recipe
Ingredients

45 ml/3 tbsp groundnut
(peanut) oil
-
350 g/12 oz shelled scallops
-
25 g/1 oz smoked ham,
chopped
-
30 ml/2 tbsp rice wine or
dry sherry
-
5 ml/1 tsp sugar
-
2.5 ml/1/2 tsp salt
-
pinch of freshly ground
pepper
-
2 eggs, lightly beaten
-
15 ml/1 tbsp soy sauce
Method:
-
Heat the oil and stir-fry the scallops for 30
seconds. Add the ham and stir-fry for 1 minute.

Add
the wine or sherry, sugar, salt and pepper and
stir-fry for 1 minute.

Add the eggs and stir gently
over a high heat until the ingredients are well
coated in egg. Serve sprinkled with soy sauce.
