Chinese Seafood Recipes - Scallops with Ginger Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 3 slices ginger root, minced

  • 2 spring onions (scallions), thickly sliced

  • 450 g/1lb shelled scallops, halved

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 60 ml/4 tbsp water


Method:

  1. Heat the oil and fry the salt and ginger for 30 seconds. Add the spring onions and stir-fry until lightly browned. Add the scallops and stir-fry for 3 minutes.

  2. Mix the corn-flour and water to a paste, add to the pan and simmer, stirring, until thickened. Serve at once.
