Scallops with Ginger Recipe
Ingredients
45 ml/3 tbsp groundnut
(peanut) oil
2.5 ml/1/2 tsp salt
3 slices ginger root,
minced
2 spring onions
(scallions), thickly sliced
450 g/1lb shelled
scallops, halved
15 ml/1 tbsp corn-flour
(cornstarch)
60 ml/4 tbsp
water
Method:
Heat the oil and fry the salt and ginger for 30
seconds. Add the spring onions and stir-fry until
lightly browned. Add the scallops and stir-fry for 3
minutes.
Mix the corn-flour and water to a paste, add
to the pan and simmer, stirring, until thickened.
Serve at once.
