Chinese Seafood Recipes - Scallops with Ham Recipe

Ingredients

  • 450 g/1lb shelled scallops, halved

  • 250 ml/8 fl oz/1 cup rice wine or dry sherry

  • 1 onion, finely chopped

  • 2 slices ginger root, minced

  • 2.5 ml/1/2 tsp salt

  • 100 g/4 oz smoked ham, chopped


Method:

  1. Place the scallops in a bowl and add the wine or sherry. Cover and leave to marinate for 30 minutes, turning occasionally, then drain the scallops and discard the marinade.

  2. Place the scallops in an ovenproof dish with the remaining ingredients.

  3. Place the dish on a rack in a steamer, cover and steam over boiling water for about 6 minutes until the scallops are tender.
