Ingredients

45 ml/3
tbsp groundnut
(peanut) oil

1 onion, sliced
-
450 g/1lb
shelled scallops, quartered

salt and freshly
ground pepper
-
15 ml/1 tbsp rice wine or dry
sherry
Method:

Heat the oil and fry the onion until softened. Add
the scallops and stir-fry until lightly browned.
-
Season with salt and pepper, sprinkle with wine or
sherry and serve at once.
