Chinese Seafood Recipes - Scallops and Onion Stir-Fry Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 onion, sliced

  • 450 g/1lb shelled scallops, quartered

  • salt and freshly ground pepper

  • 15 ml/1 tbsp rice wine or dry sherry


Method:

  1. Heat the oil and fry the onion until softened. Add the scallops and stir-fry until lightly browned.

  2. Season with salt and pepper, sprinkle with wine or sherry and serve at once.
