Chinese Seafood Recipes - Scallops with Peppers Recipe

Ingredients

  • 30ml/2 tbsp peanut oil

  • 3 spring onions, chopped

  • 1 clove garlic, crushed

  • 2 slices ginger root chopped

  • 2 red peppers, diced

  • 450g/1 lb shelled scallops

  • 30ml./2 tbsp rice wine or dry sherry

  • 15ml/1 tbsp soy sauce

  • 15ml/1 tbsp yellow bean sauce

  • 5ml/1 tsp sugar

  • 5ml/1 tsp sesame oil


Method:

  1. Heat the oil and stir-fry the spring onions, garlic and ginger for 30 seconds. Add the peppers and stir-fry for 1 minute.

  2. Add the scallops and stir-fry for 30 seconds then add the remaining ingredients and cook for about 3 minutes until the scallops are tender.
