Scallops with Peppers Recipe
Ingredients

30ml/2 tbsp peanut oil
-
3 spring onions, chopped
-
1 clove garlic, crushed
-
2 slices ginger root
chopped
-
2 red peppers, diced
-
450g/1 lb shelled scallops
-
30ml./2 tbsp rice wine or
dry sherry
-
15ml/1 tbsp soy sauce
-
15ml/1 tbsp yellow bean
sauce
-
5ml/1 tsp sugar
-
5ml/1 tsp sesame oil
Method:
-
Heat the oil and stir-fry the spring onions, garlic
and ginger for 30 seconds. Add the peppers and
stir-fry for 1 minute.
-
Add the scallops and stir-fry
for 30 seconds then add the remaining ingredients
and cook for about 3 minutes until the scallops are
tender.
