Chinese Seafood Recipes - Scallops Scramble with Herbs Recipe

Ingredients

  • 225 g/8 oz shelled scallops

  • 30 ml/2 tbsp chopped fresh coriander

  • 4 eggs, beaten

  • 15 ml/1 tbsp rice wine or dry sherry

  • salt and freshly ground pepper

  • 15 ml/1 tbsp groundnut (peanut) oil


Method:

  1. Place the scallops in a steamer and steam for about 3 minutes until cooked, depending on the size. Remove from the steamer and sprinkle with coriander.

  2. Beat the eggs with the wine or sherry and season to taste with salt and pepper. Mix in the scallops and coriander.

  3. Heat the oil and fry the egg and scallop mixture, stirring constantly, until the eggs are just set. Serve immediately.
