Chinese Seafood Recipes - Soy Fish with Oyster Sauce Recipe

Ingredients

  • 1 large bass or similar fish

  • salt

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 3 spring onions (scallions), minced

  • 2 slices ginger root, minced

  • 1 clove garlic, crushed

  • 45 ml/3 tbsp oyster sauce

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 250 ml/8 fl oz/1 cup fish stock


Method:

  1. Clean and scale the fish and score diagonally a few times on each side. Sprinkle with salt and leave to stand for 10 minutes.

  2. Heat most of the oil and fry the fish until browned on both sides, turning once.

  3. Meanwhile, heat the remaining oil in a separate pan and fry the spring onions, ginger and garlic until lightly browned.

  4. Add the oyster sauce, soy sauce and sugar and stir-fry for 1 minute. Add the stock and bring to the boil.

  5. Pour the mixture into the browned fish, return to the boil, cover and simmer for about 15 minutes until the fish is cooked, turning once or twice during cooking.
