Chinese Seafood Recipes - Squid with Dried Mushrooms Recipe

Ingredients

  • 50 g/2 oz Chinese dried mushrooms

  • 450 g/1 lb squid rings

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 45 ml/3 tbsp soy sauce

  • 2 spring onions (scallions), finely chopped

  • 1 slice ginger root, minced

  • 225 g/8 oz bamboo shoots, cut into strips

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 150 ml/2/3 cup fish stock


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stems and slice the caps.

  2. Blanch the squid rings fore few seconds in boiling water. Heat the oil then stir in the mushrooms, soy sauce, spring onions and ginger and stir-fry for 2 minutes.

  3. Add the squid and bamboo shoots and stir-fry for 2 minutes. Mix together the corn-flour and stock and stir it into the pan. Simmer, stirring, until the sauce clears and thickens.
