Ingredients

450 g/1lb minced (ground)
cod
-
1 egg, lightly beaten
-
1 slice ginger root, minced
-
2.5 ml/1/2 tsp salt
-
pinch of freshly ground
pepper
-
15 ml/1 tbsp corn-flour
(cornstarch)

15 ml/1 tbsp rice wine or dry
sherry
Method:
-
Mix all the
ingredients together well and shape into
walnut-sized balls. Dust with a little flour if
necessary. Arrange in a shallow ovenproof dish.

Stand the dish on a rack in a steamer, cover and
steam over gently simmering water for about 10
minutes until cooked.
