Chinese Seafood Recipes - Stir-Fried Lobster Recipe

Ingredients

  • 450 g/1lb lobster tails

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 2.5 ml/1/2 tsp salt

  • 350 g/12 oz bean sprouts

  • 50 g/2 oz button mushrooms

  • 4 spring onions (scallions), thickly sliced

  • 150ml/2/3 cup chicken stock

  • 15ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Bring a pan of water to the boil, add the lobster tails and boil for 1 minute. Drain, cool, remove the shell and cut into thick slices.

  2. Heat the oil with the garlic and salt and fry until the garlic is lightly browned. Add the lobster and stir-fry for 1 minute. Add the bean sprouts and mushrooms and stir-fry for 1 minute.

  3. Stir in the spring onions. Add most of the stock, bring to the boil, cover and simmer for 3 minutes.

  4. Mix the corn-flour with the remaining stock, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
