Ingredients

24 clams
-
60ml/4 tbsp peanut oil

4 cloves garlic, minced
-
1 onion, minced
-
2.5ml/1/2 tsp salt
Method:

Scrub the clams thoroughly then soak them in salted
water for a few hours. Rinse under running water
then pat dry.

Heat the oil and fry the garlic, onion
and salt until softened.

Add the clams, cover and
cook over a low heat for about 5 minutes until all
the shells have opened. Discard any that remain
closed.

Stir-fry gently for a further 1 minute,
basting with oil.
