Stir-Fried Prawns with Chicken Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil

2 cloves garlic, crushed

225 g/8 oz cooked chicken,
thinly sliced

100 g/4 oz bamboo shoots,
sliced

100 g/4 oz mushrooms, sliced

75 ml/5 tbsp fish stock
-
225 g/8 oz peeled prawns
-
225 g/8 oz snow
peas
-
15 ml/1 tbsp corn-flour (cornstarch)

ml/3 tbsp water
Method:

Heat the oil and
fry the garlic until lightly browned. Add the
chicken, bamboo shoots and mushrooms and stir-fry
until well coated in oil.

Add the stock and bring to
the boil. Add the prawns and snow peas, cover and
simmer for 5 minutes.

Mix the corn-flour and water to
a paste, stir into the pan and simmer, stirring,
until the sauce clears and thickens. Serve at once.
