Chinese Seafood Recipes - Stir-Fried Prawns in Their Shells Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 750 g/1 1/2 lb unpeeled prawns

  • 3 spring onions, chopped

  • 3 slices ginger root, minced

  • 2.5 ml/1/2 tsp salt

  • 15 ml/1 tbsp rice wine or dry sherry

  • 120 ml/4 fl oz/1/2 cup tomato ketchup (catsup)

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp sugar

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 60 ml/4 tbsp water


Method:

  1. Heat the oil and fry the prawns for 1 minute if cooked or until they turn pink if they are uncooked.

  2. Add the spring onions, ginger, salt and wine or sherry and stir-fry for 1 minute. Add the tomato ketchup, soy sauce and sugar and stir-fry for 1 minute.

  3. Mix together the corn-flour and water, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
