Stir-Fried Prawns in Their Shells Recipe
Ingredients

60 ml/4 tbsp groundnut
(peanut) oil
-
750 g/1 1/2 lb unpeeled
prawns
-
3 spring onions,
chopped
-
3 slices ginger root, minced
-
2.5 ml/1/2 tsp salt
-
15 ml/1 tbsp rice wine or
dry sherry
-
120 ml/4 fl oz/1/2 cup tomato ketchup (catsup)
-
15 ml/1 tbsp soy sauce
-
15 ml/1 tbsp sugar
-
15 ml/1 tbsp corn-flour
(cornstarch)

60 ml/4 tbsp water
Method:
-
Heat the oil and fry the prawns for 1 minute if
cooked or until they turn pink if they are uncooked.

Add the spring onions, ginger, salt and wine or
sherry and stir-fry for 1 minute. Add the tomato
ketchup, soy sauce and sugar and stir-fry for 1 minute.

Mix together the corn-flour and water, stir
it into the pan and simmer, stirring, until the
sauce clears and thickens.
