Ingredients

30ml/2 tbsp peanut oil

2 spring onions, chopped

1 clove garlic, crushed
-
1 slice ginger root,
chopped

100g/4oz chicken breast,
cut into strips
-
100g/4oz ham, cut into
strips
-
100g/4oz bamboo shoots, cut
into strips
-
100g/4oz water chestnuts,
cut into strips
-
225g/8oz peeled prawns
-
30ml/1 tbsp soy sauce
-
30ml/2 tbsp rice wine or
dry sherry
-
5ml/1 tsp salt
-
5ml/1 tsp sugar
-
5ml/1 tsp corn-flour
Method:
-
Heat the oil and fry the spring onions, garlic and
ginger until lightly browned. Add the chicken and
stir-fry for 1 minute.

Add the ham, bamboo shoots
and water chestnuts and stir-fry for 3 minutes. Add
the prawns and stir-fry for 1 minute.

Add the soy
sauce, wine or sherry, salt and sugar and stir-fry
for 2 minutes.

Mix the corn-flour with a little
water, stir it into the pan and simmer, stirring for
2 minutes.
