Fish Recipe
Ingredients
For the sauce
-
15 ml/1 tbsp groundnut
(peanut) oil
-
1 green pepper, cut into strips
-
100 g/4 oz canned pineapple
chunks in syrup
-
1 onion, cut into wedges
-
100 g/4 oz/1/2 cup brown
sugar
-
60 ml/4 tbsp chicken stock
-
60 ml/4 tbsp wine vinegar
-
15 ml/1 tbsp tomato puree
(paste)
-
15 ml/1 tbsp corn-flour (cornstarch)
-
15 ml/1 tbsp soy sauce
-
3 spring onions
(scallions), chopped
Method:
-
Clean the fish
and remove the fins and head if you prefer. Coat it
in beaten egg then in corn-flour. Heat the oil and
fry the fish until cooked through. Drain well and
keep warm.

To make the
sauce, heat the oil and fry the pepper, drained
pineapple and onion for 4 minutes.

Add 30 ml/2 tbsp
of the pineapple syrup, the sugar, stock, wine
vinegar, tomato puree, corn-flour and soy sauce and
bring to the boil, stirring.

Simmer, stirring, until
the sauce clears and thickens. Pour over the fish
and serve sprinkled with spring onions.
