Chinese Seafood Recipes - West Lake Fish Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 4 spring onions (scallions), shredded

  • 1 red chili pepper, chopped

  • 4 slices ginger root, shredded

  • 45 ml/3 tbsp brown sugar

  • 30 ml/2 tbsp red wine vinegar

  • 30 ml/2 tbsp water

  • 30 ml/2 tbsp soy sauce

  • freshly ground pepper


Method:

  1. Clean and trim the fish and make 2 or 3 diagonal cuts on each side.

  2. Heat the oil and stir-fry half the spring onions, the chili pepper and ginger for 30 seconds. Add the fish and fry until lightly browned on both sides.

  3. Add the sugar, wine vinegar, water, soy sauce and pepper, bring to the boil, cover and simmer for about 20 minutes until the fish is cooked and the sauce has reduced.

  4. Serve garnished with the remaining spring onions.
