Chinese Stock and Soups Recipes - Abalone and Mushroom Soup Recipe

Ingredients

  • 60ml/4 tbsp peanut oil

  • 100g/4oz lean pork, cut into strops

  • 225g/8oz canned abalone, cut into strips

  • 100g/4oz mushrooms, sliced

  • 2 stalks celery, sliced

  • 50g/2oz ham, cut into strips

  • 2 onions, sliced

  • 1.5ml/6 cups water

  • 30ml/2 tbsp wine vinegar

  • 45ml/3 tbsp soy sauce

  • 2 slices ginger root, chopped

  • salt and freshly ground pepper

  • 15ml/1 tbsp corn-flour (cornstarch)

  • 45ml/3 tbsp water


Method:

  1. Heat the oil and fry the pork, abalone, mushrooms, celery, ham and onions for 8 minutes.

  2. Add the water and wine vinegar, bring to the boil, cover and simmer for 20 minutes. Add the soy sauce, ginger, salt and pepper.

  3. Blend the corn-flour to paste with the water, stir it into the soup and simmer, stirring, for 5 minutes until the soup clears and thickens.
