Chinese Stock and Soups Recipes - Bean Sprout and Pork Soup Recipe

Ingredients

  • 450 g/1 lb pork, cubed

  • 1.5 l/2 1/2 pts/6 cups chicken stock

  • 5 slices ginger root

  • 350 g/12 oz bean sprouts

  • 15 ml/1 tbsp salt


Method:

  1. Blanch the pork in boiling water for 10 minutes then drain. Bring the stock to the boil and add the pork and ginger.

  2. Cover and simmer for 50 minutes. Add the bean sprouts and salt and simmer for 20 minutes.
