Chinese Stock and Soups Recipes - Beef and Chinese Leaves Soup Recipe

Ingredients

  • 200 g/7 oz lean beef, cut into strips

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 1.5 l/2 1/2 pts/6 cups beef stock

  • 5 ml/1 tsp salt

  • 2.5 ml/1/2 tsp sugar

  • 1/2 head Chinese leaves, cut into chunks


Method:

  1. Mix the beef with the soy sauce and oil and leave to marinate for 30 minutes, stirring occasionally.

  2. Bring the stock to the boil with the salt and sugar, add the Chinese leaves and simmer for about 10 minutes until almost cooked.

  3. Add the beef and simmer for a further 5 minutes.
