Chinese Stock and Soups Recipes - Beef Soup Recipe

Ingredients

  • 225g/8oz minced beef

  • 15ml/1 tbsp soy sauce

  • 15ml/1 tbsp rice wine or dry sherry

  • 15ml/1 tbsp corn-flour

  • 1.2l/5 cups chicken stock

  • 5ml/1 tsp chili bean sauce

  • salt and pepper

  • 2 eggs, beaten

  • 6 spring onions, chopped


Method:

  1. Mix the beef with the soy sauce, wine or sherry and corn- flour. Add to the stock and gradually bring to the boil, stirring.

  2. Add the chili bean sauce and season to taste with salt and pepper, cover and simmer for about 10 minutes, stirring occasionally.

  3. Stir in the eggs and serve sprinkled with the spring onions.
