Chinese Stock and Soups Recipes - Cabbage Soup Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 2 onions, chopped

  • 100 g/4 oz lean pork, cut into strips

  • 225 g/8 oz Chinese cabbage, shredded

  • 10 ml/2 tsp sugar

  • 1.2 l/2 pts/5 cups chicken stock

  • 45 ml/3 tbsp soy sauce

  • salt and pepper

  • 15 ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Heat the oil and fry the onions and pork until lightly browned. Add the cabbage and sugar and stir-fry for 5 minutes.

  2. Add the stock and soy sauce and season to taste with salt and pepper. Bring to the boil, cover and simmer gently for 20 minutes.

  3. Mix the corn-flour with a little water, stir it into the soup and simmer, stirring, until the soup thickens and clears.
