Ingredients

2 chicken legs
-
30 ml/2 tbsp groundnut
(peanut) oil
-
5 ml/1 tsp rice wine or dry sherry

1.5 l/2 1/2 pts/6 cups
chicken stock
-
3 spring onions, sliced
-
100 g/4 oz bamboo shoots,
cut into chunks
-
5 ml/1 tsp minced ginger
root
-
salt
Method:
-
Bone the chicken
and cut the flesh into chunks. Heat the oil and fry
the chicken until sealed on all sides.
-
Add the
stock, spring onions, bamboo shoots and ginger,
bring to the boil and simmer for about 20 minutes
until the chicken is tender.
-
Season to taste with
salt before serving.
