Chinese Stock and Soups Recipes - Chicken and Bamboo Shoot Soup Recipe

Ingredients

  • 2 chicken legs

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp rice wine or dry sherry

  • 1.5 l/2 1/2 pts/6 cups chicken stock

  • 3 spring onions, sliced

  • 100 g/4 oz bamboo shoots, cut into chunks

  • 5 ml/1 tsp minced ginger root

  • salt


Method:

  1. Bone the chicken and cut the flesh into chunks. Heat the oil and fry the chicken until sealed on all sides.

  2. Add the stock, spring onions, bamboo shoots and ginger, bring to the boil and simmer for about 20 minutes until the chicken is tender.

  3. Season to taste with salt before serving.
