Chinese Stock and Soups Recipes - Fish Soup Recipe

Ingredients

  • 225 g/8 oz fish fillets

  • 1 slice ginger root, minced

  • 15 ml/1 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1.5 l/2 1/2 pts/6 cups fish stock


Method:

  1. Cut the fish into thin strips against the grain. Mix the ginger, wine or sherry and oil, add the fish and toss gently.

  2. Leave to marinate for 30 minutes, turning occasionally. Bring the stock to the boil, add the fish and simmer gently for 3 minutes.
