Ingredients

225 g/8 oz fish fillets

1 slice ginger root, minced
-
15 ml/1 tbsp rice wine or
dry sherry
-
30 ml/2 tbsp groundnut (peanut) oil

1.5 l/2 1/2 pts/6 cups fish stock
Method:
-
Cut the fish into
thin strips against the grain. Mix the ginger, wine
or sherry and oil, add the fish and toss gently.
-
Leave to marinate for 30 minutes, turning
occasionally. Bring the stock to the boil, add the
fish and simmer gently for 3 minutes.
