Ingredients
5 cm/2 in piece ginger
root, grated
350 g/12 oz brown sugar
1.5 l/7 cups water
225 g/8 oz/2 cups rice
flour
2.5 ml/1/2 tsp salt
60 ml/4 tbsp water
Method:
Place the ginger,
sugar and water in a pan and bring to the boil,
stirring. Cover and simmer for about 20 minutes.
Strain the soup and return it to the pan.
Meanwhile, place
the flour and salt in a bowl and gradually knead in
just enough water to make a thick dough. Roll it
into small balls and drop the dumplings into the
soup.
Return the soup to the boil, cover and simmer
for a further 6 minutes until the dumplings are
cooked.
