Chinese Stock and Soups Recipes - Ginger Soup with Dumplings Recipe

Ingredients

  • 5 cm/2 in piece ginger root, grated

  • 350 g/12 oz brown sugar

  • 1.5 l/7 cups water

  • 225 g/8 oz/2 cups rice flour

  • 2.5 ml/1/2 tsp salt

  • 60 ml/4 tbsp water


Method:

  1. Place the ginger, sugar and water in a pan and bring to the boil, stirring. Cover and simmer for about 20 minutes. Strain the soup and return it to the pan.

  2. Meanwhile, place the flour and salt in a bowl and gradually knead in just enough water to make a thick dough. Roll it into small balls and drop the dumplings into the soup.

  3. Return the soup to the boil, cover and simmer for a further 6 minutes until the dumplings are cooked.
