Ingredients
Method:

Soak the
mushrooms in warm water for 30 minutes then drain,
reserving the liquid.

Discard the stalks and cut the
caps in half if large and place in a large heatproof bowl. Stand the bowl on a rack in a
steamer.

Bring the stock to the boil, pour over the
mushrooms then cover and steam for 1 hour over
gently simmering water. Season to taste with salt
and serve.
