Chinese Stock and Soups Recipes - Mushroom Soup Recipe

Ingredients

  • 15 dried Chinese mushrooms

  • 1.5 l/6 cups chicken stock

  • 5 ml/1 tsp salt


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain, reserving the liquid.

  2. Discard the stalks and cut the caps in half if large and place in a large heatproof bowl. Stand the bowl on a rack in a steamer.

  3. Bring the stock to the boil, pour over the mushrooms then cover and steam for 1 hour over gently simmering water. Season to taste with salt and serve.
