Chinese Stock and Soups Recipes - Mushroom and Water Chestnut Soup Recipe

Ingredients

  • 1 liter/4 1/4 cups vegetable stock or water

  • 2 onions, finely chopped

  • 5 ml/1 tsp rice wine or dry sherry

  • 30 ml/2 tbsp soy sauce

  • 225 g/8 oz button mushrooms

  • 100 g/4 oz water chestnuts, sliced

  • 100 g/4 oz bamboo shoots, sliced

  • few drops of sesame oil

  • 2 lettuce leaves, cut into pieces

  • 2 spring onions (scallions), cut into pieces


Method:

  1. Bring the water, onions, wine or sherry and soy sauce to the boil, cover and simmer for 10 minutes.

  2. Add the mushrooms, water chestnuts and bamboo shoots, cover and simmer for 5 minutes.

  3. Stir in the sesame oil, lettuce leaves and spring onions, remove from the heat, cover and leave to stand for 1 minute before serving.
