Chinese Stock and Soups Recipes - Pork and Mushroom Soup Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 2 onions, sliced

  • 225 g/8 oz lean pork, cut into strips

  • 1 stick celery, chopped

  • 50 g/2 oz mushrooms, sliced

  • 2 carrots, sliced

  • 1.2 l/2 pts/5 cups beef stock

  • 15 ml/1 tbsp soy sauce

  • salt and freshly ground pepper

  • 15 ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Heat the oil and fry the garlic, onions and pork until the onions are soft and lightly browned.

  2. Add the celery, mushrooms and carrots, cover and simmer gently for 10 minutes.

  3. Bring the stock to the boil then add it to the pan with the soy sauce and season to taste with salt and pepper.

  4. Mix the corn-flour with a little water then stir it into the pan and simmer, stirring, for about 5 minutes.
